Innovation

DEVELOPMENT OF INNOVATIVE SYSTEMS FOR FOOD TRANSFORMATION

This trajectory aims at introducing new and innovative techniques in the field of food processing, such as for example refrigeration, freezing, the transport of the food product or its transformation into a “ready-to-use” product.

INNOVATIVE AND MORE SUSTAINABLE PACKAGING FOR AGRICULTURAL PRODUCTS

In this trajectory, interventions are planned for the development of innovative and more sustainable packaging for agri-food products. The trajectory includes non-invasive solutions for in-line and laboratory control of packaging integrity and for the detection of contaminants and foreign bodies in food products; the use of materials (even “active”) that do not release contaminants in food; innovative and the most efficient sensoric solutions to improve the shelf-life of food products and to identify any contamination; the development of innovative natural preservatives (eg biofilms, phyto-extracts, etc.); innovative solutions for monitoring the cold chain.

DEVELOPMENT OF METHODS AND TECHNOLOGIES IN FAVOR OF INTEGRATED SYSTEMS BETWEEN AGRO-FOOD, TOURISM AND ECOLOGY

This trajectory is dedicated to the innovative interventions of integration between the various agri-food, tourism and environmental protection activities, aimed at the socio-economic recognition of the territory. In this context, innovations that can enhance the prestige agricultural-forest production to give productive continuity and life to the areas concerned are included. In support of this trajectory, applications of innovative digital technologies can be implemented for the multifunctional appreciation of the territorial and cultural heritage that are also compatible with the international certification systems.

Traceability quality safety

DEVELOPMENT OF COMPLETE TRACEABILITY SYSTEMS

This theme includes innovations to develop complete systems of traceability along the entire supply chain, from raw material to the consumer, with a geographical indication of the production area and indications of the elements and health and nutritional data. This includes innovations aimed at developing integrated hardware-software systems for the labeling and traceability of agri-food products and for the control of production and harvesting activities in order to guarantee the authenticity of certified products; the application and research of genomic methods, based on DNA, for the identification, traceability and control of microorganisms (bacteria, yeasts and molds); the innovations for the traceability of the agri-food product and the identification of quality parameters through the use of innovative analytical technologies; the design of customized databases for each type of food, or food product, with the aim of scientifically defining the actual origin of the product from the area declared on the label. Also part of the traceability of product sales and the innovations in the connection between the customer and the supply system for tracking the product (introduction of ICT). Additionally, these are part of the traceability of product sales and the innovations in the connection between the customer and the supply system to track the product (introduction of ICT).
